Oatmeal Sweet Potato Breakfast Bake

If you’ve had a hard time finding a healthy breakfast that tastes great and keeps you full and satisfied until lunch, look no further. Even if oatmeal doesn’t sound like a tempting treat, this Oatmeal Sweet Potato Breakfast Bake will have you waking up early!

Yield: 8 Servings

Total Time: 45 Minutes

Prep Time: 15 Minutes

Cook Time: 30 Minutes

Ingredients:

Remember, organic is always best!

3 ½ cups rolled oats 
6 tablespoons maple syrup
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 cup cooked and mashed sweet potato
1 cup milk or milk alternative of your choice
2 eggs lightly beaten
¼ vegetable oil or ¼ unsweetened apple sauce (Both ingredients will work well with this dish.)

Directions

Lightly grease an 8 x 8 inch baking dish.

Preheat oven to 350 degrees.

Combine oats, maple syrup, baking powder, salt, cinnamon, and nutmeg and mix well.

In a separate bowl combine sweet potatoes, milk, eggs, and oil or applesauce together and mix well. 

Pour wet mixture into dry mixture and combine well.

Pour into greased baking dish and spread evenly with a spatula.

Bake until oatmeal is firm and golden brown, approximately 30 minutes. 

Oatmeal Sweet Potato Breakfast Bake can be served warm or cold, with milk or not, and garnished with fruit. A bit of ice cream or whipped cream and it’s also a delicious dessert! Enjoy!
